So, what is paksoi?
Paksoi, also known as bok choy, is a cruciferous vegetable that belongs to the cabbage family. It has dark green leaves that are similar in texture to lettuce, and a crisp, juicy stalk that is reminiscent of celery. Paksoi has a slightly sweet, mild flavor with a hint of bitterness. This versatile ingredient can be used raw in salads, stir-fried with other vegetables, or added to soups and stews. It is an excellent source of vitamins A and C, as well as fiber and potassium.
