Palmier, also known as "elephant ear" or "palm tree" cookie, is a sweet French pastry made from puff pastry dough that is rolled in sugar and baked until golden brown. The unique shape of the palmier resembles a palm leaf or butterfly, with flaky layers that are light and crisp yet rich in flavor.
