Pecorino is a type of hard, salty cheese made from sheep's milk. Originating in Italy, this cheese has a crumbly texture and a slightly nutty flavor. Some popular varieties include Pecorino Romano, which is aged for at least eight months and has a sharp, tangy flavor, and Pecorino Toscano, which has a milder, buttery taste. Pecorino is a versatile ingredient that can be grated over pasta, used in salads or enjoyed on its own with a glass of wine.
