So, what is pepsin?
Pepsin is a digestive enzyme that plays a crucial role in breaking down proteins into smaller peptides. It is produced in the stomach by chief cells and is released into the digestive tract to help digest dietary proteins. Pepsin is highly specific, meaning that it only breaks down certain amino acid sequences in proteins. Its activity is optimized at an acidic pH, which is why the stomach secretes hydrochloric acid to create an acidic environment that enhances pepsin activity. Pepsin is also used in the production of cheese and as a supplement to aid protein digestion.
