Phosphate monocalcique is a white, odorless, and crystalline food ingredient commonly used as a leavening agent in baked goods. It is a calcium salt of phosphoric acid that reacts with baking soda to produce carbon dioxide gas, which causes dough or batter to rise. Phosphate monocalcique is also used in processed cheese to improve its texture and as a nutrient supplement in animal feed. It is generally recognized as safe by the FDA and is commonly found in many commercially produced baked goods, such as bread, muffins, and cakes.
