So, what is roasted garlic puree?

Roasted garlic puree is a paste made from the cooked bulbs of the garlic plant, Allium sativum. It is produced by roasting whole or peeled garlic cloves until they soften, brown, and caramelize, after which they are mechanically mashed or blended into a smooth, thick consistency. In commercial food production, the mixture may occasionally include small amounts of vegetable oil, water, salt, or citric acid to assist with processing and preservation.

This ingredient is widely used as a flavoring agent in savory prepared foods, including pasta sauces, salad dressings, ready-made soups, dips, marinades, and frozen entrees. Roasted garlic puree receives a vegan verdict because it is derived entirely from botanical sources. The primary ingredient is garlic, and any typical processing aids or carriers, such as vegetable oil or citric acid, are of plant or microbial origin, involving no animal-derived materials.
