Rundergelatine is a versatile food ingredient derived from bovine collagen, which is extracted by boiling animal connective tissues. This odorless and tasteless gelatinous substance is commonly used to thicken, stabilize, and emulsify various foods and beverages, such as jellies, desserts, sauces, soups, and drinks. Rundergelatine is also prized for its protein content, which can enhance the nutritional value of many dishes. Moreover, rundergelatine is easy to use and store, and it has a long shelf-life. However, it may not be suitable for vegans or vegetarians due to its animal-based origin.
