So, what is salsifi?

Salsifi, also known as the oyster plant, is a root vegetable that is native to the Mediterranean region. Its long, slender roots are covered in a thin brown skin that must be peeled before eating. Once cooked, salsifi has a delicate, slightly sweet flavor and a texture similar to that of cooked oysters, hence its nickname. This unique ingredient is versatile in the kitchen and can be boiled, roasted, or fried to add a distinct flavor and texture to salads, soups, and side dishes. Salsifi is also a good source of fiber, potassium, and vitamins B and C.
