So, what is scarola?

Scarola, also known as endive or bitter chicory, is a leafy vegetable with a slightly bitter taste and crunchy texture. The outer leaves are usually green while the inner ones are yellowish-white. This ingredient is commonly used in Mediterranean cuisine, particularly in Italy where it's often served raw in salads or cooked as a side dish. Scarola is low in calories and high in fiber, vitamins A and C, and minerals such as calcium and potassium. Its bitter flavor makes it an excellent digestive aid, stimulating the liver and aiding in detoxification.
