It is a free-flowing, fine powder with a neutral taste that enhances the texture, mouthfeel, and stability of various food products, from baked goods to confectionery and dairy products. Sirop de glucose déshydraté acts as a humectant, preventing foods from drying out, and as a bulking agent, providing volume and thickness. It is also useful for preventing crystallization in frozen desserts and controlling water activity in processed foods. As a natural sweetener with a lower sweetness level than sucrose, sirop de glucose déshydraté is a healthier alternative to refined sugar in many recipes.
