Sodium aluminum sulphate is a white, odorless powder that is commonly used as a leavening agent in baking. It is also known as sodium alum or SAS and has a chemical formula of NaAl(SO4)2. SAS is an acidic salt that reacts with baking soda to produce carbon dioxide gas, which causes baked goods to rise. It is commonly used in cakes, cookies, and other baked goods to give them a light, fluffy texture. SAS is generally recognized as safe by the US Food and Drug Administration and is widely available in grocery stores and online.
