Соевый лецитин is a widely used food ingredient extracted from soybeans that serves as an emulsifier, stabilizer, and lubricant. It is composed of a mixture of phospholipids, which are essential components of cell membranes. Soy lecithin is commonly added to food products such as chocolate, baked goods, and margarine to improve their texture, extend their shelf life, and prevent separation. It is also used in non-food products such as cosmetics and pharmaceuticals. Despite its name, soy lecithin is not a significant source of soy protein or allergens and is generally considered safe for consumption.
