Sorbitanmonostearate, also known as SMS, is a food emulsifier commonly used in the food industry. It is derived from sorbitol, a sugar alcohol found in fruits and berries, and stearic acid, a saturated fatty acid found in animal and vegetable fats. SMS helps to improve the texture and consistency of food products by preventing separation and maintaining a smooth, homogenous mixture. It is commonly found in processed foods such as margarine, ice cream, and baked goods. Despite its widespread use, SMS is generally considered safe for consumption by regulatory authorities.
