So, what is surdejskultur?
Surdejskultur, also known as sourdough culture, is a naturally fermented mixture of flour and water that contains live yeast and lactic acid bacteria. It is commonly used as a leavening agent in bread making, giving bread its signature tangy flavor and chewy texture. Unlike commercial yeast, which is a single strain of yeast, sourdough culture contains a diverse community of microorganisms that contribute to the bread's flavor and nutrition. Surdejskultur can be created by capturing wild yeast from the air or by using a pre-existing sourdough culture as a starter. It is a popular ingredient in artisanal bread making and has been used for centuries in various cultures around the world.
