So, what is syrekultur?
Syrekultur, also known as cheese culture, refers to a blend of microorganisms that are added to milk to initiate the process of cheese-making. These cultures consist of bacteria, yeasts, and molds, which are carefully selected based on the type of cheese being made. The microorganisms consume lactose in the milk, producing lactic acid, which lowers the pH and causes the milk proteins to coagulate and form curds. The specific combination of cultures used can greatly affect the flavor, texture, and aroma of the cheese, making it an essential ingredient in the art of cheese-making.
