Syřidlo is a traditional ingredient used in the production of cheese. It is a natural enzyme that helps to coagulate milk and separate it into solid curds and liquid whey. Derived from the stomachs of young ruminants such as calves, syřidlo contains the enzyme chymosin, which is essential for cheese-making. The process of adding syřidlo to milk initiates the transformation of liquid milk into solid cheese. Syřidlo is available in liquid or tablet form and is a crucial ingredient in the production of various types of cheese, from soft to hard cheeses.
