So, what is tagatose?
Tagatose is a natural low-calorie sweetener that is structurally similar to fructose. It has gained popularity in recent years due to its ability to act as a sugar substitute without affecting blood glucose levels. Tagatose is derived from lactose, but it has a glycemic index of just 3, making it ideal for diabetics and those following a low-carbohydrate diet. Additionally, tagatose has been shown to have prebiotic properties and may aid in digestion. Its taste profile is similar to that of table sugar, with a slight cooling effect on the tongue.
