Thaumatin is a natural protein extracted from the fruit of the katemfe plant found in West Africa. It is a sweetener that is up to 2,000 times sweeter than sugar, making it a popular alternative sweetener for people looking to reduce their sugar intake. Thaumatin has a unique taste that is described as sweet with a slight licorice or fruity aftertaste. It is often used in the food and beverage industry to sweeten products such as yogurt, chewing gum, and soft drinks. Thaumatin is also used in the pharmaceutical industry as a flavor enhancer and to mask the taste of bitter drugs.
