So, what is tragant?

Tragant, also known as gum tragacanth, is a natural plant-derived gum that is commonly used as a thickening agent in the food industry. It is extracted from the dried sap of several species of legumes native to the Middle East and parts of Asia. Tragant has been used for centuries in traditional medicine and is said to have anti-inflammatory properties. In addition to its culinary uses, it can also be found in cosmetics, pharmaceuticals, and even textiles. Its unique texture and ability to hydrate quickly make it a versatile ingredient in many recipes, from ice cream to salad dressings.
