So, what is white pépper?

White pepper is a popular spice that comes from the Piper nigrum plant. Unlike black pepper, white pepper is made by removing the outer layer of the peppercorn, leaving only the inner seed. This process gives it a milder flavor with a slightly earthy and floral aroma. White pepper is commonly used in dishes where the strong, pungent flavor of black pepper would be overpowering, such as creamy soups, sauces, and light-colored meats. It also adds a subtle kick to baked goods like cookies and cakes. Its light color makes it an appealing choice for enhancing the presentation of dishes.
