So, what is xanthangummi?

Xanthan gummi is a natural food ingredient made through the fermentation of corn sugar by the Xanthomonas campestris bacterium. It's commonly used as a thickener, stabilizer, and emulsifier in various food products like salad dressings, sauces, and baked goods. This off-white powder has excellent water-holding properties and can create a smooth texture in foods. Due to its unique ability to increase the viscosity of liquids, xanthan gummi is an ideal alternative for gluten-free baking. It's also widely used in vegan and vegetarian food products as a binding agent.
