So, what is amidons modifies?
Amidons modifies, or modified starches, are starches that have been chemically or physically altered to improve their functional properties for use in food products. They can be derived from a variety of sources, such as corn, wheat, tapioca, or potato, and are commonly used as thickeners, stabilizers, emulsifiers, or texture enhancers in a wide range of food applications, including soups, sauces, dressings, baked goods, dairy products, and beverages. Modified starches can provide specific functional benefits, such as improved freeze-thaw stability, increased viscosity, reduced syneresis, or enhanced mouthfeel, depending on the desired application. They can also offer cost savings, process efficiencies, or label-friendly solutions for food manufacturers.
