So, what is digliceridos de acidos grasos?
Diglycerides of fatty acids, also known as "digliceridos de acidos grasos" in Spanish, are a type of emulsifier commonly used in the food industry. They are created by combining fatty acids with glycerol, resulting in a molecule with two fatty acid chains and one glycerol backbone. Diglycerides can be derived from plant or animal sources and are used to improve the texture, shelf life, and stability of various food products such as baked goods, ice cream, and margarine. Due to their ability to prevent oil and water from separating, diglycerides are often added to processed foods to enhance their overall quality and consistency.
