So, what is eggs albumen?
Egg albumen, also known as egg white, is the clear, viscous substance that surrounds the yolk of a chicken egg. It accounts for about 60% of the weight of an egg and it contains high-quality protein with all essential amino acids needed for muscle growth and repair. The albumen has a neutral taste, but can be whipped to create a fluffy texture in recipes such as meringues, soufflés, and angel food cake. It is also used as a clarifying agent in some cocktails and as a natural adhesive in baking. Egg albumen is a versatile ingredient used in many culinary preparations.
