So, what is fermento lácteos?
Fermento lácteos, also known as dairy starter cultures, are mixtures of microorganisms used to initiate the fermentation process in dairy products such as cheese, yogurt, and sour cream. These cultures typically contain strains of lactic acid bacteria, which convert lactose (milk sugar) into lactic acid, creating a tangy flavor and preserving the product. In addition to enhancing flavor, fermento lácteos can also improve texture and extend shelf life. They are available in various forms, including powders, capsules, and liquid cultures, and are a crucial component of the dairy industry.
