So, what is ferments lactique sélectionnés?
Ferments lactique sélectionnés, or selected lactic acid bacteria, are a group of beneficial microorganisms used in food fermentation. These bacteria are carefully selected for their ability to transform lactose, a sugar found in milk, into lactic acid. This process not only gives food a tangy and slightly sour flavor but also improves its texture and increases its shelf life. Ferments lactique sélectionnés are commonly used in the production of cheese, yogurt, sour cream, and other dairy products. These bacteria also provide health benefits by promoting digestion, boosting the immune system, and preventing harmful bacteria from growing in the gut.
