So, what is green and red lentils?
Green and red lentils are the edible seeds of the Lens culinaris plant, a domesticated legume grown as an annual agricultural crop. Green lentils retain their outer seed coats and maintain a firm texture when cooked, whereas red lentils are usually dehulled and split, resulting in a softer texture that breaks down quickly during preparation. Both types are harvested from the pods of the plant, threshed, cleaned, and sorted through mechanical processes. They appear frequently on ingredient labels for dry pulse blends, canned soups, stews, prepared curry dishes, pasta alternatives, and plant-based meat substitutes.
This ingredient is vegan because it consists entirely of whole or mechanically processed plant matter. The cultivation, harvesting, and milling of lentils do not require animal-derived inputs, animal byproducts, or animal processing aids at any stage of production. Any product listing green and red lentils contains an ingredient of pure plant origin.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
