So, what is phospholipids?
Phospholipids are a vital class of lipids that are essential for the proper functioning of cells in our bodies. These complex molecules consist of a phosphate group, a glycerol backbone, and two fatty acid chains. They are amphipathic, which means that they have both hydrophobic and hydrophilic properties, enabling them to form the structure of cell membranes. Phospholipids also play a critical role in various biological processes, including signal transduction, cell recognition, and membrane trafficking. Moreover, they are widely used as emulsifiers in the food industry to improve the texture and stability of various food products such as margarine, salad dressings, and baked goods.
