So, what is soy mono-and-diglycerides?
Soy mono-and-diglycerides are a type of emulsifier commonly used in food production. They are derived from soybean oil and help to blend ingredients that would normally separate, such as oil and water. These additives are often used in baked goods, dairy products, and margarine to improve texture, increase shelf life, and prevent clumping. While some studies have raised concerns about the potential health effects of consuming large amounts of soy-based products, the FDA has deemed soy mono-and-diglycerides safe for consumption in small quantities.
