So, what is mono-diglycerides?
Mono-diglycerides are a type of emulsifier commonly used in the food industry. They are produced by combining glycerol with fatty acids, resulting in molecules with both hydrophilic (water-loving) and hydrophobic (water-repelling) properties. This allows mono-diglycerides to effectively mix oil and water-based ingredients, helping to stabilize and improve the texture of foods like baked goods, dairy products, and processed meats. Mono-diglycerides are considered safe for consumption by regulatory bodies like the FDA, but some studies suggest that excessive intake may have negative health effects, making moderation key.
