So, what is açafrão?
Açafrão is a bright orange spice that comes from the dried stigmas of the crocus flower. Also known as saffron, it has a distinct flavor and aroma that can be described as floral, honey-like, and slightly bitter. A prized ingredient in many cuisines, açafrão is often used to add depth and complexity to dishes such as paella, risotto, and bouillabaisse. Due to its intense flavor and high cost, it is typically used sparingly and added towards the end of the cooking process. Beyond its culinary uses, açafrão has been used for centuries for medicinal purposes and is believed to have antioxidant and anti-inflammatory properties.
