So, what is aldol?
Aldol is a colorless, viscous liquid used as a food ingredient and in various industrial applications. It is formed through the condensation of two molecules of an aldehyde or ketone under basic or acidic conditions. In food, aldol is primarily used as a flavoring agent and a precursor for other flavor compounds. Its unique chemical structure allows it to impart a sweet, caramel-like flavor to foods, making it a popular ingredient in baked goods, confectionery, and beverages. Aldol is also used in the production of pharmaceuticals, polymers, and other industrial products.
