So, what is alginate sodique?
Alginate sodique is a naturally occurring polysaccharide derived from brown seaweed. It is widely used in the food industry as a thickener, stabilizer, and gelling agent. Alginate sodique has unique properties that allow it to create stable gels even in the presence of acidic substances. It is commonly used in the production of jellies, puddings, and other desserts, as well as in the creation of foams and emulsions. In addition to its culinary uses, alginate sodique is also used in the medical field for wound healing and in the manufacturing of dental impressions.
