So, what is almidón de mandioca?
Almidón de mandioca, also known as cassava starch, is a versatile ingredient that is derived from the roots of the cassava plant. This fine, white powder is a common thickening agent used in a wide variety of dishes, from soups and stews to sauces and desserts. It has a neutral flavor and high binding power, making it an excellent substitute for cornstarch and wheat flour in gluten-free recipes. Almidón de mandioca is also a good source of energy and contains small amounts of vitamins and minerals, including vitamin C, calcium, and potassium.
