Ammonium bicarbonate, also known as baker's ammonia or powdered baking ammonia, is a white crystalline powder with a strong odor of ammonia. It is commonly used in baking as a leavening agent, particularly in traditional European and Scandinavian recipes for cookies, crackers, and other baked goods. Unlike other leavening agents, it releases carbon dioxide gas quickly at low temperatures, resulting in light and airy baked goods. Ammonium bicarbonate breaks down into ammonia, water, and carbon dioxide during baking, leaving no residue or flavor behind. However, it should be used sparingly and handled with care due to its pungent smell and potential irritant properties.
