So, what is bicarbonate ammonium?
Bicarbonate ammonium, also known as ammonium bicarbonate or baking ammonia, is a chemical compound commonly used in the food industry as a leavening agent. It releases carbon dioxide gas when heated, which causes dough or batter to rise and become fluffy. Unlike other leavening agents, bicarbonate ammonium doesn't leave a bitter aftertaste and doesn't require an acid to activate. It is commonly used in making traditional European baked goods such as gingerbread, cookies, and crackers. Bicarbonate ammonium has a strong odor, reminiscent of ammonia, which dissipates during baking. It is a white crystalline powder that is highly soluble in water and alcohol.
