So, what is ammonium isostearate?
Ammonium isostearate is a chemical compound commonly used as a food additive to improve the texture and consistency of various food products, such as bread, cake, and margarine. It is derived from isostearic acid, a fatty acid found in some vegetable oils, and is commonly used as an emulsifier due to its ability to mix oil and water-based ingredients. Ammonium isostearate also helps to stabilize foams and enhances the whipping and aeration of certain foods. Despite its chemical-sounding name, ammonium isostearate is considered safe for consumption by regulatory bodies such as the FDA.
