Amoniyev karbonat, also known as ammonium carbonate, is a white crystalline powder with a strong ammonia odor. This food ingredient is commonly used as a leavening agent in baked goods such as cookies, crackers, and breads. It reacts with moisture and heat to release carbon dioxide gas, which causes the dough or batter to rise and become light and airy. Amoniyev karbonat can also be used as a pH regulator, a buffering agent, and a flavoring agent in some food products. Despite its pungent odor, it is generally recognized as safe (GRAS) by the US Food and Drug Administration (FDA) when used in accordance with good manufacturing practices.
