So, what is an emulsifier?
An emulsifier is a type of food ingredient that helps to stabilize and blend two immiscible substances together, such as oil and water. It works by reducing the surface tension between the two substances, allowing them to mix uniformly and prevent separation. Emulsifiers are commonly used in processed foods, such as mayonnaise, salad dressings, and baked goods, to improve texture, shelf life, and appearance. Some examples of emulsifiers include lecithin, mono- and diglycerides, and polysorbate 80. While emulsifiers are generally considered safe for consumption, some studies suggest that excessive consumption of certain types may have negative health effects.
