So, what is emulsifier?
An emulsifier is a type of food ingredient that is used to create stable emulsions by combining two immiscible substances such as oil and water. Emulsifiers work by reducing the surface tension between the two substances, allowing them to mix evenly and remain suspended for longer periods of time. Common emulsifiers include lecithin, mono- and diglycerides, and polysorbates, which are often used in products like mayonnaise, salad dressings, and baked goods. Emulsifiers play an important role in food manufacturing, helping to improve texture, mouthfeel, and shelf life while also ensuring that products maintain a consistent quality and appearance.
