So, what is anacardo?
Anacardo, also known as cashew, is a versatile and flavorful nut that is widely used in both sweet and savory dishes around the world. The kidney-shaped nut is encased in a hard outer shell that contains a caustic resin which must be carefully removed before consumption. Once the nut is roasted or boiled, it becomes a rich and buttery ingredient that adds depth and texture to everything from curries and stir-fries to cakes and cookies. Anacardo is also a good source of healthy fats, protein, and essential nutrients like copper, magnesium, and zinc.
