So, what is anhydrous milk fat?
Anhydrous milk fat (AMF) is a dairy ingredient that is derived from fresh cream and has a minimum milkfat content of 99.8%. AMF is produced through a process of gentle melting, clarification, and filtration to remove any water, protein or other impurities. It is a versatile ingredient with a neutral flavor and creamy texture, which makes it ideal for use in bakery products, confectionery, ice cream, and many other food applications. AMF is also a great source of healthy fats, including conjugated linoleic acid (CLA), which has been shown to have potential health benefits such as reducing inflammation and improving heart health.
