So, what is ascorbate?
Ascorbate, also known as vitamin C, is a water-soluble nutrient found in a wide variety of fruits and vegetables. It plays an essential role in maintaining the health of skin, bones, and connective tissues, as well as boosting the immune system. As a food ingredient, ascorbate is commonly used as an antioxidant and preservative to prevent oxidation and spoilage of foods. It is also used to enhance the flavor and texture of processed meats and seafood, and to prevent the formation of nitrosamines, which are potential carcinogens.
