It is produced by heating cane sugar with water and an acid, which breaks down the sucrose into its constituent parts: glucose and fructose. The resulting syrup is sweeter than regular sugar and has a higher moisture content, making it an excellent ingredient for adding sweetness and moistness to baked goods.
