So, what is carbonates d‘ammonium?
Carbonates d'ammonium, also known as ammonium carbonate, is a white crystalline powder that is commonly used as a leavening agent in baked goods. When heated, it releases carbon dioxide, which causes dough or batter to rise, resulting in a light and fluffy texture. It is often used in traditional European and Middle Eastern recipes, such as gingerbread, springerle cookies, and speculaas. Ammonium carbonate has a strong odor and is slightly bitter in taste, so it should be used sparingly in recipes. It is important to handle ammonium carbonate with care as it can irritate the skin and eyes, and should not be ingested in large amounts.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
