So, what is carboxy methyl cellulose?
Carboxy methyl cellulose (CMC) is a commonly used food ingredient that is derived from cellulose, a natural polymer found in plant cell walls. CMC is a white, odorless, and tasteless powder that is highly soluble in water, making it ideal for use in many food applications, such as bakery products, dairy products, and beverages. As a food additive, CMC functions as a thickener, stabilizer, and emulsifier, helping to improve texture, consistency, and shelf life. CMC is also used in the production of low-fat and reduced-calorie foods, as it can mimic the mouthfeel and texture of fat without adding calories.
