Sodium caseinates, derived from the protein casein found in milk, are a common food ingredient used for their emulsifying, thickening, and binding properties. These white, odorless, and tasteless powders are highly soluble in water and have a pH level of around 7.5 to 8.5. They are often used in a variety of processed foods, such as creamers, cheese, baked goods, and meat products, as well as in dietary supplements and medical foods.
