Microcrystalline cellulose, also known as MCC or cellulose gel, is a naturally derived food ingredient that is commonly used as an anti-caking agent, thickener, and stabilizer in a variety of processed foods. It is made by breaking down cellulose fibers into small particles through a complex process of hydrolysis, purification, and drying. MCC has several unique properties that make it ideal for use in food products, including its ability to absorb water, improve texture and mouthfeel, and enhance the shelf life of foods. As a low-calorie and high-fiber ingredient, microcrystalline cellulose is also beneficial to human health by promoting digestive regularity, weight management, and satiety.
