So, what is chocoláte liquor?
Chocolate liquor is a smooth, velvety substance that is the result of grinding and liquefying cocoa beans. It is often used as a base for various chocolate products, including chocolate bars, truffles, and ganaches. The liquor is made by roasting cocoa beans, removing the shells, and grinding the nibs into a paste. This paste is then liquefied to create the chocolate liquor. Despite its name, chocolate liquor does not contain any alcohol. It has a deep, rich chocolate flavor and is an essential ingredient in the chocolate-making process.
