Citrato tricálcico is a food ingredient commonly used as an anti-caking agent, emulsifier, and firming agent. It is a white, odorless powder made from calcium carbonate and citric acid, which are both naturally occurring substances. Citrato tricálcico is often added to processed foods such as baked goods, dairy products, and powdered drink mixes to prevent clumping, improve texture, and extend shelf life. As a source of calcium, it can also contribute to the nutritional value of these products. Despite its widespread use, citrato tricálcico has been found to be safe for consumption by regulatory bodies around the world.
